Lentil soup

Red lentils provide plant-based protein and fiber, while turmeric and vegetables ensure a natural boost. Thanks to the coconut milk, the soup has a creamy and smooth flavor, ideal for lunch or a light evening meal.
- 150 g red lentils
- 1 carrot
- 1 courgette
- 1 onion
- 2 cloves of garlic
- 400 ml coconut milk
- 500 ml vegetable stock
- 1 tsp turmeric
- 1 tsp paprika
- 1 tbsp olive oil
- Pepper & sea salt
- Fresh coriander or parsley for garnish
Finely chop the onion and garlic, and cut the carrot and zucchini into small cubes. Next, heat the olive oil in a pan and briefly sauté the onion and garlic. Then add the turmeric and paprika and cook for about a minute to release the flavors. Next, add the carrot, zucchini, and red lentils, and pour the vegetable stock along with the coconut milk into the pan. Bring the mixture to a boil and then let the soup simmer gently for about 20 minutes, or until the lentils are cooked. For an extra creamy texture, you can optionally partially purée the soup. Finally, season to taste with salt and pepper and garnish with fresh herbs.
